Mung bean protein contains a lot of proteins, averaging 24.1%. Mung bean protein is extracted from mung bean protein. The amino acid and protein subunit composition of mung bean protein are analyzed. The results show that mung bean protein is rich in lysine and sulfur amino acid is the first limiting amino acid.
